How to make AMAZING POWER BARS | Fiona’s Food for Life

This is a delicious wholefood snack recipe from The Happy Pear in Greystones. They are easy to make & full of goodness, I have found them great after a workout, in lunchboxes or when you fancy a sweet treat! They contain so many nutrients, including protein, essential fatty acids, omega 3 oils, and minerals. It is a great source of low gi energy.

This recipe serves around 48 bars, and you can change the nuts or dried fruit if you prefer another, you could add protein powder if you like, otherwise, I think the recipe is perfect as it is! So check out the list of ingredients below:

200g almonds
50g pumpkin seeds
100g sunflower seeds
50g ground flaxseeds
40g sesame seeds
30g goji berries
60g chopped dried apricots
50g desiccated coconut
35g cacao nibs
80g cacao butter, melted
125ml raw honey
55g pure almond butter
1⁄2 tsp. salt
1⁄4 vanilla pod (use vanilla extract if not concerned about it being raw)

50g cacao butter
1⁄2 vanilla pod
55g cacao powder (use vanilla extract if not concerned about it being raw)
70ml honey/maple syrup

Serving suggestions: Serve as a snack at any time of the day. Ideal for lunch boxes or snacks on the go or post workout or perhaps something sweet with a cup of tea.

Storage: Best stored in the fridge in an airtight container for up to 3 weeks.
